How to make homemade ice cream soft?

I’m making ice cream out of Ensure nutritional drinks for a relative with Alzheimer’s and dysphagia (trouble swallowing, especially thin liquids).

Alton Brown (food network) made sorbet on one of his episodes and said that putting a tad of alcohol in it will keep it from freezing rock solid. Since Ensure isn’t really cream, acts more like water, then maybe it would work. Here’s the link to the recipe he used.

You could always write to the Food Network and ask them to devise a recipe for all the people who cannot enjoy regular ice cream.
